I'm very doubtful for this tourney, but since you're asking for opinions...
I think you should do as you see fit, but realize that fewer weight classes deter a lot of pullers. There are beast 154/165 guys that won't have much for the top 200-pounders that'll show, so they'll probably stay home. Likewise, those guys a shade over 200 won't be able to do much with the mammoths that will show, so they will be deterred too.
As you currently have it structured I think this tourney is a magnet for novices more than open guys. You might end up with two top-heavy (but small) open classes. If that's the goal then roll with it.

Again.....this tournament is MAINLY for the novice and ladies. Opens is just to give us something to do while we promote our novices. Its getting blown up really big, but those open classes wont deter the local novice entries.

If you're worried more about the novice turnout, then leave it alone...because only having two open classes that are split at 200 will turn off many of the lighter (165, 176) pros...as well as many of the 215-225 pros. If you're wanting a better pro turnout....then I think going to at least 3 classes would help....even if they don't match the rankings (0-185, 186-220, 221+)....or four classes (0-175, 176-200, 201-225, 226+). Or, you could do one open class for right and left, double elimination, but set the brackets up according to weight (instead of random draw)...heaviest at the top, lightest at the bottom...that way guys are pulling opponents that are closest to their weight as much as possible. Just my two cents.
Edit: If you do the one class thing like I mentioned above, paying money down to 4th or 5th place will give the little guys a chance to get in the money....because the winner will probably be over 200 lbs.

Then I would just scrap the pro class(s) all together....then you won't have to worry about pros complaining about the weight classes (because it will happen no matter what classes you decide, haha). There's nothing wrong with having a novice-only tournament. You've already got the supermatches for some added excitement.

Yeah, were leaving it the way it is. James Worke is going to win about $200.00 in the 98 open right handed class alone. If anyone wants to show up and take a ride on the Tennessee Train, you are more than welcome to donate! :-)
