Hard to put them in order, I did not include any war or battle scenes such as ones from Brave Heart or Patriot, those are quite good but I consider them war scenes with an emphasis on weapons as opposed to those below, (so for the use of weapons I excluded Bruce Lee’s fight with the guards in Enter the Dragon) and I did not list any of the big high wire fights we now see.
Rowdy Roddy Piper vs. Keith David in “They Live”, if you have not seen this one, just rent it for the fight scene in the alley.
Bruce Willis, vs. Alexander Godunov (the long haired blond guy) in the original Die Hard
Jet Li vs. the Karate school (in the classroom) in Fist of Legend
The Rock vs. the pro football players at the nightclub, in The Rundown
Bruce Lee vs. O’Hara in Enter the Dragon
Mel Gibson vs. Gary Busey in Lethal Weapon
Jean Claude Van Damme vs. Dolph Lundgren the final fight scene in Universal Soldier.
Sylvester Stallone vs. Mickey Rourke in Get Carter
Phillip Rhee vs. Simon Rhee in the Best of the Best
Jackie Chan in the final fight scene of the Legend of Drunken Master.

I love the Rocky fights.
If you assume a fighter could take that much punishment still no modern day boxing match of that brutality would have been continued to the cards/last round, that kind of ruins it for me.
However I have to say I am more a fan of Rocky 3 and 4

Freddy vs Jason in Freddy vs Jason
Jeff Speakman vs the guys in the dojo in The Perfect Weapon
Jet Li vs Mel Gibson in Leathal Weapon 3 or 4
Sly and Carl in both the first two Rocky movies
Uma Thurman vs all the hitmen/women in Kill Bill 2
Sho Kosugi in any of his movies. A real pleasure to watch
Clint Eastwood vs the other guy in every which way but loose

All the Matrix's and Blades have intense fighting scenes throughout the movie. One of my friends interned at the local cable company and we made a parody of the matrix call the faketrix that had some good fights in it they aired it on the local station

Amazing fight scene is Patrick Swayze vs the martial artist in Roadhouse (Where Swayze Rips the guys throat out in the beach fight scene) and The Hanson brothers vs anybody in the movie Slapshot.

"The Blade" A great warrior has his arm cut off by bandits. He then goes into isolation with half a sword instruction manual, his father's broken sword and trains himself to fight one handed with a chain attached to his broken sword. The climatic battle pits him against the man who killed his father and is also rumored to fly. This villian is a master of using two swords simulataneously and tells all his victims to be faster, be faster. too slow, how to fight! Admist a terrain of desert and bear traps, by far, the most insane battle scene ever without any computer effects. Absolutely mind boggling. Unfortunately, this is a very hard to find movie. Amazon has overseas copies in stock occasionaly. This is certainly a very dark movie.
